It's to do with the chicken's ear lobes to what colour egg it produces. In the UK we sell brown eggs in the supermarket, in the US they sell white eggs.
I get eggs from my neighbour and they range in colour.
I love an egg. POACHED on toast.

I followed Delia's recipe for poaching an egg which was bring an inch of water in a pan to a simmer, lob the egg in for 1 minute and then move the pan off of the hob and leave for another 7 minutes.
Problem is it doesn't leave the egg runny, though that doesn't overly bother me.

try whisking the boiling water in the pan to create a bit of a whirpool, that helps the egg keep shape and in one piece. Also break the egg first into a small bowl and add a drop or two of vinegar.
